Step 1
Combine all the sauce ingredients above together and pour half over the chicken and let it marinate for 30 minutes. Sauté the onion and 1 tbsp of garlic. Push aside and add 2 tbsp oil and brown the chicken for 2 minutes per side. Turn it over and pour the remainder of the sauce. (For more sauce, you can add the rest of the marinade) Add bay leaves then cover and simmer for 25-30 minutes. Remove the lid and cook on medium heat for additional 5 minutes until the sauce reduces to your liking.

Serve with steamed rice and enjoy!
