Mexican Chicken, Sweet Potato and Black Bean Skillet

Made changes. Left out salsa. Used pinto and black beans. Should have par cooked the sweet potato a bit more. Served with cilantro lime rice.

Not bad, not outstanding.

Pour ALL of the salsa in and add a bit more water in before you add the cheese. Place under the grill if you want a crispy top. Could be used with soft tacos

Delicious as I was cooking it, I thought it was going to be a little dry, but to my surprise, it wasn't it was very tasty

Ok so I did a few things wrong. Firstly, I forgot all about the sweet potato, that was an afterthought that i just chopped up really small and threw in, won’t do that again. (Very crunchy) Secondly, went very heavy on spices thinking the amount in the recipe wasn’t enough, will not make that mistake again, nearly blew my head off! Other than that a very nice dish. Will definitely make again.

Excellent! Cooked in cast iron skillet, so much flavor with garnish of cilantro & avocado.

I had no salsa so I used red pesto. Was really delicious 😋

Delicious. I roasted my sweet potatoes in the oven with a bit of olive oil, salt and black pepper, I added a bit more salsa than the recipe stated and I was out of black beans so I replaced those by brown lentils. I served with sour cream and sliced avocado. Both kids and adults loved it, will definitely make again.

Yum! Tasted almost like Chipotle! Never par-boiled anything before and I am glad I tried it. Easy! Colorful and healthy. Served over some brown rice.

WOW this has become my new favorite dinner. So tasty, so many flavors and so quick and easy to make, all in one pot so not much cleanup, plus I had the leftovers for lunch the next day. I used a mixture of black beans and black-eyed peas (a can of each) and I really recommend mixing it up, it just adds that bit of extra flavor. Not in the photo but topped it with coriander on top. Absolutely delicious meal and will be part of the regular rotation!

So good! I would make again. I tend to shy away from dishes with lots of ingredients buy really its just lots of spices. We put it over rice too.

Made it with purple sweet potatoes and it was quite the colorful dish. I would par cook the potatoes 3 minutes next time instead of 4. Very yummy and easy.

Tasty, could use more spiciness if you like it hot!
