Instructions
Step 1
Half bell peppers, brush with oil of choice (olive oil is my preference) and season with S&P. Place in over set to 375 for 15 mins.
Step 2
In a non stick skillet, brown your Turkey with your choice of Mexican Seasoning
Step 3
Add Black Beans, Riced Cauliflower, Pico De Gallo and 1/4 cup of Cheese, mix well
Step 4
Remove bell peppers from oven and fill with 1/3 of cup of the Turkey mixture.
Step 5
Add the remaining 1/4 cup of cheese on top of stuffed bell peppers.
Step 6
Return to oven to bake an additional 15 mins. *add fresh cilantro on top once finished. Serve and enjoy
