Avocado Corn Salad

Made this for Christmas lunch. It was devine.

Light, fresh and delicious 😋. Added a little mayo to give it more body, and protein to make it a meal

Put on top of a bed of greens, and added feta!

Full of fresh summer time flavors! All the flavors complimentary, and nothing overpowering. I brought this to a cookout (there were no leftovers!) and was asked to bring it to the next one. Easy to make too!

To die for. I ate it until I was sick to my stomach. I roasted the corn in a pan with evoo then didn't add any additional oil to the salad. I added green onions. The corn adds sweetness; the tomato & lime add acidity; the red onion & raw garlic add a bite; the avocado adds a creamy coolness. It's all a perfect blend.
