Vegetable Kofta
Vegetable kofta are delicious little spice bombs made of a mixture of vegetables. They are great becuse you can use up all the bits and bobs of veg you have left in the fridge. The kofta are really good as a starter served with a delicious spicy chutney like my Mint chutney or as a snack or lunchtime bite. They are great to cook in bulk and anything you dont use can be frozen and used another time. I sometimes also serve them as a main with a cashew nut masala or with my tomato masala like my lamb kofta curry. Super versatile and fun to cook too.
