Instant Pot Shepherd's Pie

Careful with the broiler.

I kept the skins on, but it was AMAZING! Will definitely be making it more. Total hit in my house :)

Smart use of the instant pot. Used half and half instead of milk/butter in the mashed potatoes, used cornstarch to thicken the sauce instead of gravy, and lightly salted both the potatoes and the filling.

YUM! Used skin on red potatoes (cuz we like them) , a whole bag of frozen veggies and only one packet of gravy mix (that sounded like a lot of salt and preservative) - it was definitely the right decision for us as we don’t normally cook with packets so are somewhat salt sensitive. I suspect my husband could live on this recipe based on how much he’s eating….

Kids loved it. Will add more potato next time. The garlic in the mash was yum
