Instructions

Step 1
Rinse and pat dry the chicken. Cut into 2 inch pieces

Beat the eggs in a shallow bowl and set aside

In another large shallow bowl, combine the coconut flour and seasonings

Dip the chicken pieces first in the egg, then into the breading mixture and coat well

To cook stovetop

Heat a large pan to medium heat and add ghee or oil

Cook the chicken nuggets 3-4 minutes per side until they’re golden brown. Add more ghee/coconut oil as needed – you want the nuggets to get crispy on the outside

To bake

Step 7
Preheat oven to 425 degrees
Step 8
Spread nuggets evenly on a parchment-lined baking sheet and drizzle or spray with olive oil
Step 9
Bake for 20-25 minutes, flipping midway
