These vegetable dumplings are filled with a variety of fresh vegetables and are perfect with my homemade dumpling sauce!

Ingredients

2 Tbspneutral oil
3cloves garlic
minced
1 Tbspginger minced
6scallions
chopped, whites and greens separated
0.5white onion
large, chopped
1 cupshiitake mushrooms
chopped
2 cupsnapa cabbage
chopped
1 cupcarrot
shredded
1 tspsalt
to taste
½ tspwhite pepper
½ Tbspsesame oil
2 tspsugar
2 Tbspshaoxing wine
2 Tbspsoy sauce
¼ tspmsg
1 packagedumpling wrappers
Instructions
Step 1
In a large pan over medium high heat, add 2 tbsp of oil to the pan and stir fry garlic, ginger, scallion whites and onion for about 30 seconds - 1 minute until the aromatics are fragrant and the onion is softened.
Step 2
Add the mushrooms, cabbage, and carrot and season with the salt draw out moisture. Continue stir frying for 4-5 minutes until the water has evaporated from the vegetables and liquid has cooked off. Move the vegetable mixture to a large bowl to let cool.
Step 3
To the vegetable mixture, add the scallion greens along with the white pepper, sesame oil, sugar, shaoxing wine, soy sauce, msg. Taste and season with additional salt, if desired.
Step 4
Assemble your dumplings by taking 1/2 tbsp of filling into a dumpling wrapper, then wet the edge of the dumpling with water. Fold to create a half moon then pleat each side with your thumbs until the dumpling has formed a crescent shape.
Step 5
Boil, steam, or pan fry your dumplings and enjoy!
