I really like fish, but salmon? Nope. I could never make it work! Three recipes in, I resigned, giving up on the dry, flavourless fish I considered salmon to be. How wrong I was! Fast forward to a few months ago, when I was having coffee with a good friend of mine. She mentioned her plans to cook salmon that night, and I told her about my failed attempts at salmon recipes. She told me about this recipe, and said she’d bring me a piece to try. Needless to say, after tasting it, this salmon recipe was suddenly catapulted into my list of favourites! This combination of sweetness and zestiness, alongside the distinctive and bold flavour of salmon, might sound surprising! But it actually fits the five pillars of flavour - sweet, salty, sour, bitter and umami - to perfection. Give it a try!
