Instructions
Chili Oil
Step 1
Heat oil and Sichuan peppercorns in a small saucepan over medium-high. Heat for 5-10 minutes or until the oil begins to smoke. Keep an eye on the oil so it doesn't burn.
Ingredients Before Chili Oil
Step 2
While the chili oil heats, add the bottom parts of the green onions, minced garlic, five spice powder, sesame seeds, and brown sugar to a bowl. Mix together.
Step 3
Once the oil begins to smoke, immediately pour it into the bowl of pre-mixed ingredients. Use a mesh strainer so the Sichuan peppercorns don't go into the bowl. The ingredients should sizzle and cook from the heat of the oil.
Ingredients After Chili Oil
Step 4
Meanwhile, cook noodles according to package instructions. Strain and divide into 2 bowls for serving.
Step 5
To the chili oil bowl, add the light soy sauce, dark soy sauce, vinegar, and optional sesame oil. Stir to combine.
Step 6
Spoon the mixture over the cooked noodles.
Step 7
Add desired toppings such as fried eggs, the sliced top portion of the green onions, and sliced cucumbers.
