Chicken Cheesesteak Baked Potatoes

I thought this recipe turned out pretty good for a gluten free/red meat free version of the original. I did add some smoked paprika and Tony Chachere's Creole seasoning for some extra flavor. I might make this again on a day I am not strapped for time when planning dinners in the future.

Husband said it tasted great. I subbed chicken strips cut into small pieces for the ground chicken. Used white velveeta cheese in place of provolone.
