Instructions

Step 1
1. Preheat oven to 425 degrees

2. Pierce potatoes all over with a fork.
Step 3
3. Bake at 425 degrees until tender, about 45 minutes. Transfer to a clean cutting board and let cool slightly

4. Heat chicken and broth in a small saucepan over medium heat until hot. Keep warm

5. Make a lengthwise cut in each potato to open but don't cut all the way through. Pinch the ends to expose the flesh. Divide butter, salt and pepper among potatoes, scraping with a fork to incorporate the butter

6. Top the potatoes with the chicken mixture and sprinkle with cheese. Place on a rimmed baking sheet

7. Bake until cheese is melted, 3 to 4 minutes.

8. Serve the potatoes topped with sour cream, BBQ sauce and scallions
