Ingredients
4 servings
4boneless skinlesschicken breasts
cut into 2 inches strips
4 tablespoonsextra virgin olive
1red onion
large, thinly sliced
0.5yellow bell pepper
large, thinly sliced
0.5red bell pepper
large, thinly sliced
0.5green bell pepper
large, thinly sliced
1 x 4 ozcan mushrooms
ned, drained
4carrots
large, sliced into thin rounds
1 ½ teaspoonssalt
to taste
3garlic cloves
minced
0.5 x 6 oztomato paste
can
2 cupswater
1 ½ teaspoonspaprika
1 teaspooncayenne
optional
1 ½ teaspoonsground black pepper
0.5fresh parsley
chopped
0.5 tablesponsumac
1lemon
small, juice
Instructions
Step 1
Add extra virgin olive oil to a large skillet over medium heat.
Step 2
Toss the chicken strips and lightly season them with salt and black pepper.
Step 3
Sear the chicken strips for about 2 minutes.
Step 4
Add the red onion, yellow bell pepper, red bell pepper, green bell pepper, mushrooms, and sliced carrots. Salt the mixture and cook for 5-7 minutes more.
Step 5
Add in the minced garlic, tomato paste, water, lemon, paprika, sumac, and cayenne.
Step 6
Stir and simmer for 10-15 minutes until the sauce has thickened.
Step 7
Garnish your dish with freshly chopped parsley.
Step 8
Serve with rice, hummus, or pasta. Bon Appetit!
