I used Halibut cut into smaller pieces and cooked in a cast iron skillet. I lowered the heat to medium after achieving a nice crust on the fish as it was on the thick side and I wanted it to cook through without burning. Garnished with cilantro and lemon. Served with basmati rice and roasted broccoli. I used some of the leftover curry paste on the broccoli prior to roasting and it was delicious! Even my picky son liked this dish!
