This is a great mock 'tuna' salad sandwich using chickpeas. Alternately, serve this as lettuce wraps or use sliced vegetables like bell pepper and cucumber as scoopers.

1 x 14 ozcan chickpeas

garbanzo beans, drained and rinsed

juice of, + some zest if you like

¼ cupvegan mayo

or 3 - 4 tablespoons hummus or white bean hummus + 2 - 3 tablespoons water

¼ cupcelery

leaves ok too, chopped

¼ cupred onion

¼ teaspoongarlic powder

crushed, or dulse, seaweed

1 tablespoonchia seeds

or hemp hearts for some omega 3 & 6

sweet pickle relish

6slices whole grain

sprouted whole grain flourless or artisan bread, to serve

to serve, optional

I wont say it's like a tuna sandwich...it's better. I didn't use the norii but for me it didn't need it. So good!!! Paired it with a Carrot Apple Soup.

I have to admit I was dubious about this recipe, because I LOVE tuna sandwiches. But it’s delicious! And pretty similar!!

Really good! Made this with regular mayo. With lemon and dill, it tasted almost like egg salad. With the nori sheets it made it more fishy than tuna, but still tasty. Ate it with crackers.

Added furikake and Yeast Flakes, replaced onions (my kiddos hate onions) for one more celery stalk, finely diced. They did not miss the fish one bit. I added vegan cheddar for some tuna melt action. :)

This was so good! I used a nice few pickles and added in a couple tablespoons of the pickle Juice as well, along with some dill! (I clearly like that flavor profile a lot lol). Added it to a wrap along with some kimchi cucumbers I made a week ago and it was the perfect little lunch :)
