This Southern Italian dish of eggs poached in spicy tomato sauce works equally well for dinner as it does for brunch, especially when paired with crusty bread and perhaps a side salad.

Used 4 slices of bacon chopped up and cooked that first. I ended up with enough rendered fat in the pan that I didn't need olive oil. Removed the bacon and continued the recipe as written. Once sauce was done added the bacon back and then the eggs. Used the base amount of pepper flakes and Italian seasoning in place of basil but basil would be much better. Bread is a must with this one
