Instructions
Step 1
Heat the oil in a frying pan, then sauté the onions until translucent approx 5 minutes, then add chilli, garlic, tomato paste stirring until fragrant about 1 minute.
Step 2
Add the cherry tomatoes, sugar, salt and cumin then simmer for 10 to 15 minutes until thickened and we’ll cooked.
Step 3
Using the back of a spoon, make 5 dips in the sauce, then crack an egg into each one.
Step 4
Put a lid on the pan, then cook over a low heat for 6-8 mins, until the eggs are done to your liking.
Step 5
Sprinkle the paprika and black pepper and garnish with the parsley leaves and serve with pita bread or toasted bread.
