2 tablespoonsolive oil
3cloves garlic
minced
1onion
diced
2 packagesChipotle Jasmine Rice
1 cupbroccoli
steamed, optional
1 x 15 ouncescan black beans
1 x 15.5 ouncescan diced tomatoes
1 ½ teaspoonscumin
1 teaspoonsalt
1 ½ teaspoonsground black pepper
3 cupswater
or vegetable stock
2 cupstriple cheddar cheese
divided, leave out 1/2 cup for garnish
Fresh cilantro
chopped, for garnish
2 stalksgreen onions
chopped for garnish
Instructions
Step 1
Preheat oven to 375℉.
Step 2
In a large skillet, heat oil and sauté for 5 minutes the onions and garlic until onions are translucent and garlic is fragrant.
Step 3
Add the beans, tomatoes, cumin, salt, pepper, and water or vegetable broth. Bring to a boil and simmer covered for 15 minutes.
Step 4
Place the ingredients in an oil-sprayed casserole. Open and pour over 2 packages of Mahatma Chipotle Jasmine Rice, steamed broccoli, corn, and 1½ cups of shredded cheese and mix with the ingredients in the casserole.
Step 5
Garnish with the remaining ½ cup of cheese.
Step 6
Bake for 18 minutes until the cheese is melted. Garnish with fresh minced cilantro and chopped green onions.
