Slow Cooker Corned Beef

This was incredible and easy! I used boar's head corned beef, which came out perfectly. Pearl onions, celery, baby carrots and baby potatoes. Never thought of adding broth but definitely will from now on. Next time will try half broth half water, and a dash of olive oil. Great recipe!

I basically cook my corned beef the same way. Remove from slower cooker and place in baking dish. Then, top with a combination of marmalade, brown sugar and dry mustard and place in the oven at about 400 to warm and caramelize the top. I always get rave reviews. I place the carrots and potatoes in a casserole topped with a small amount of seasoning, butter and warm in the microwave. Slice the corned beef and sprinkle fresh parsley on carrots/potatoes. I make a traditional whole wheat Irish soda bread from Bon Appétit and serve key lime pie for dessert.
