Corned Beef and Cabbage Dinner (slow cooker)

This has been a family favorite since I was a child and continued with my children. This slow cooker method makes this a great week day special meal plus helps to avoid over cooked corn beef.
You will want to add extra corned beef spices as slow cooking can cook the spices out (I use the spices that come with the corned beef and then add more using Pickling spices, mustard seeds, peppercorns, bay leaves - OR - Penzy's has a great corned beef seasoning). Usually I add 3 spice balls for a nice flavor. If you have a large slow cooker, the best corned beef is when you cook a flat cut with a point cut; the fat in the point cut soaks in the spices and adds extra flavor to the flat cut.
POINT TO NOTE: Our family would add butter and a bit of salt to our potatoes (this was in the 50's & 60's folks) and a bit of mustard for the corned beef. My husband and children don't add a thing.... to each their own.
NOTE: When all is done, I taste the cooking broth. If it is tasty, I de-fat it and freeze it in order to use as a soup base (Potato Soup and Beef Vegetable Soup are my favorites).

Spray Slow Cooker with Pam

Slice onion in thick slices and put in a slow cooker
Step 3
Rinse the corned beef and put on top of onion
Step 4
In spice balls (like tea strainers), add corned beef spices (at least two balls) and place around the meat. Then cover the meat with water (I use filtered water).
Step 5
Let cook on low for 8-10 hours
Step 6
Put meat on platter and keep warm in oven (covered) at around 180 degrees

Transfer juices, onions & spice balls to a dutch oven

Add carrots and potatoes, bring to boil then simmer for 30 - 45 minutes (till vegetables are cooked to your liking) - transfer to bowl(s) and keep warm in oven.
Step 9
Slice cabbage in wedges and place in dutch oven. Bring to boil, cover, and simmer around 5-10 minutes (till tender).
