Beet and Goat Cheese Pasta

Cut beets way more before going in oven.

This was great! I cut the sauce recipe in half since I used a lesser amount of pasta. I used store bought beets already cooked. Had to add quite a bit of pasta water to thin the sauce. Will make again!

The goat cheese is very strong. If you don’t like a strong taste, put just 1tbs of goat cheese and a bit of double cream instead :) Regardless, is delicious

I was intrigued by this recipe - and it surprisingly good! Loved the pistachios and mint on top. Added garlic powder to the sauce as well.
