Ingredients: 3-4 nectarines (diced small (depending how fruity you want it lol)); 2 small seedless cucumbers (diced small); 1 jalapeño (finely chopped (seeds removed if desired)); 1/4 of a large red onion (minced and rinsed in cold water); 1 ear fresh corn (shucked and kernels removed from the ear); 1/4 cup chopped fresh mint (plus more for serving if desired); 1/4 cup chopped fresh dill; 1/4 cup chopped shelled roasted pistachios; 4 oz feta cheese (diced small); 1 1/2 cups cooked quinoa; 3 Tbsp fresh lemon juice; 1/4 cup extra virgin olive oil; Kosher salt and black pepper to taste

Instructions

Step 1

Add everything to a large bowl and toss gently. Taste the salad and add more lemon, olive oil, salt and or pepper if desired. Thats it! So fresh so yum!
