A great and fairly easy recipe to make amazing hot dog buns. If you are not a big hot dog fan then first, shame on you. Second, use that big brain of yours and shape these differently for great hamburger buns or even all purpose rolls. Oh and if you have more patience (I don't) let the dough rise a bit, then drop it in the fridge overnight, for even more lip smacking goodness.

Instructions

Whisk together flour, yeast, sugar, and salt in a large bowl.

Heat 3 tbsp of butter and milk in a small saucepan until butter has just melted. Remove from heat to cool slightly.

Whisk together warm water and one egg in a medium bowl. Add warm milk and butter mixture and whisk until combined. Pour over flour mixture and stir until the dry for is all mixed in. The dough will start to feel too sticky to work with your hands, that is expected. Do your best to get the ingredients pulled tighter, nothing more.

Cover tightly and let stand in a warm place 2 to 4 hours until dough has doubled in size. You can also refrigerate overnight.

Line a baking pan/sheet with parchment paper.

Turn risen dough out onto a lightly floured work surface and gather dough into a ball with lightly floured hands, then divide in half.

Roll out each half separately with a rolling pen to about 1/8 of an inch thick, a rectangle or square shape. No need to be perfect in the shape. Then roll the dough tightly into a log. This will create nice layers in the rolls

Cut each log into 5 equal sections for a total of 10.

Shape each piece into a ball and then use the roller again to make each piece into a rectangle. Shape into a 5-6" hot dog bun with the edges folded under.

Place each bun about 1/2-inch apart on prepared baking sheet. Cover loosely with a clean kitchen towel and let rise until puffy, about 1-2 hours depending on the dough temperature.

When ready to bake, preheat oven to 375˚F.

Whisk together remaining egg with 1 tbsp of water and brush over buns. If you are fancy or getting a visit from the Queen, you can sprinkle with some poppy seeds or cornmeal.

Bake 10-12 minutes or until tops are golden brown, rotating sheet halfway through baking time.
