Chicken & bean enchiladas

I was a little more generous with the Chipotle paste. I dont put the cheese on until the last 10 minutes or it disappears. Very tasty. I make and then freeze the leftovers for another day.

Nice enchiladas. I added kidney beans for extra bulk

Loved this one, I doubled the amount of chipotle, added courgette and used chopped tomatoes instead of passata (we didn't have any) - would definitely recommend!

Used turkey mince instead and the whole family loved them would definitely make again
