Tried using a silicone mini cupcake pan, made 68. Used 2 whole bananas mashed up, butter instead of shortening and doubled the cinnamon. Turned out extremely moist and tasted delicious. I tried both a cinnamon cream cheese and a cinnamon buttercream frosting, I think the cream cheese complimented this recipe more but the buttercream definitely holds up better for decoration.
