Mexican Street Corn Salad

Tasty, and easy to make. Stays fresh for literally days, so it is a great dish for making in advance

Enjoyed it. Simple to make but tasty and would be a great summer side dish. Could add canelli beans or chicken to make it into a meal.

Excellent flavors! I used 4 cans sweet corn, drained, and sautéed the corn and jalapeño in oil on med high heat. I ended up doubling the sauce. So yummy!

used mayo, red onion, and limejuice for salt used frozen corns witb smoked paprika, sea salt, fresh garlic, lime juice, and some salsa (1-2 tbsp) cooked until liquid was gone and mixed with sauce didnt have cheese or jalepheno and 🙌

Use Trader Joe’s charred corn if fresh corn on the cob is unavailable.

I don't have a picture but this was great!! I'd rate it a 9 out of 10. We didn't have a grill to use so we took ears of fresh corn and cut off the kernels. Then we put those into a glass bowl and covered it and microwaved it until it was mostly cooked. Then cooked it in a pan with the jalapeno on high to give it a chared flavor. It had a great smokey flavor. We didn't have any fresh cilantro so it probably could of tasted even better with that! We made it warm because the corn was just cooked so the cheese melted into the mixture - apparently this meal is great warm or cold. 😂

You can use frozen fire roasted corn to save time, and use sour cream in place of mayo!

Excellent! The only thing I would change is I would not use lime zest. Although, if you know how to properly zest which I don't add it. I went to far "zesting" and used some of the white parts which made it a tad bitter.

Only in the summer with fresh corn

I was short an ear of corn, so skillet roasted a heaping half cup of frozen corn kernel to make up for it. Left out cilantro and jalapeno (to make it kid and hubby friendly) and added a little bit more smoked paprika. Went along great with carne asada tacos, but I could seriously eat the whole dish by itself. So good!
