Step 1
Add 1 tablespoon olive oil to a large pan and turn heat to medium
Step 2
Add tomatoes, season with salt and pepper, and cook for 5 minutes
Step 3
Add gnocchi to pan, another drizzle of olive oil, and season again with salt and pepper
Step 4
Cook for 10-15 minutes, stirring frequently, until the tomatoes are blistered and gnocchi is slightly browned & crispy
Step 5
Turn heat to low and top with mozzarella cheese slices. Cover until the cheese melts
Step 6
Turn off heat and top with fresh basil leaves, balsamic glaze and freshly cracked black pepper
