Ingredients

880gchickpeas
drained and rinsed
3beets
medium-sized, roasted and peeled
¾ cupwater
¾ cupTahini
½ cuplemon juice
2garlic cloves
minced
7.5mlsalt
10mlground cumin
½ cupolive oil
olive oil
15mlParsley
Fresh Chopped
edible flower petals
celery
cucumber
baby bell peppers
sugar snap peas
Radish
Easter Egg, Watermelon Radish, or French Breakfast
baby carrots
cherry tomatoes
endive
Instructions
Step 1
Preheat oven to 400F.
Step 2
Wrap beets, unpeeled, in foil. Place on a baking tray.
Step 3
Roast for 30-40 minutes until tender. Allow to cool. Then peel beets, and quarter. Set aside.
Step 4
Place the chickpeas, beets, and water in a food processor. Pulse until pureed.
Step 5
Add the tahini and pulse to combine
Step 6
Add the lemon juice, garlic, salt, and cumin, pulse to combine.
Step 7
Scrap down the bowl as needed.
Step 8
Then slowly add the olive oil in a steady stream, pulsing all the while until combined.
Step 9
Transfer the hummus to a serving bowl. Create swoops and swirls with a spatula. Drizzle with olive oil
Step 10
garnish with freshly chopped parsley or editable flowers.
Step 11
Serve with assorted vegetables
