Step 1
Preheat oven to 200C (fan)
Step 2
Cut the baguette lengthwise.
Step 3
Mix olive oil with Mediterranean spice mix ( or with your favorite spices) and brush the baguette.
Step 4
Transfer to the baking tray lined with parchment and bake at 200C (fan) for 10-15 minutes or until golden brown.
Step 5
Meanwhile halve the avocado vertically and remove the pit. Scoop the flash out and slice it.
Step 6
When bread is ready, spread your pesto on it (2tbsp on each), place the avocado slices , then cucumber ribbons followed by sun dried tomatoes slices. Garnish with chilli flakes and enjoy!
