Easy and delicious Mediterranean pasta
6 steps

Having "nothing" in the fridge always brings out the best and creative new discoveries for me. This is one of those. I "discovered" it 6 years ago, and today it's still one of my go-tos.
It can also be served as an appetizer - just cut everything in half.
And it is easy (and tasty) to make a vegetarian version too - just replace bacon with mushrooms or tofu bacon, or skip it altogether.
It's also convenient for the "mixed" company - you can make both versions in parallel easily.

While the pasta is cooking, season and saute the zucchini.
If you prefer, you can do this on the grill pan.

Step 4
Add cooked zucchini and bacon into a big bowl - this is where all the magic will happen soon.
Step 5
In a small bowl marinate the cherry tomatoes with dry basil, olive oil, lemon juice and season with salt and pepper according to your taste. You can go a little braver here since this marinade will be distributed over the huge amount of pasta later.
Step 6
By now the pasta should be ready - drain and add it to zucchini and bacon bowl. Now add marinated cherry tomatoes and mix them all together.
Taste and adjust the seasoning according to your liking.
You can also add some more olive oil or lemon if you wish.
