Sausage & Pepper Soup, for me, is one of the great comfort meals. Whether it’s a cold or rainy day, I’m sick, whatever, any opportunity I get to make it, I do. And it’s so great because it practically makes itself and gets better as leftovers, as all the flavors mingle together even more.

Instructions

Step 1
Cut your sausages into 1 inch or so pieces, add to a large pot.
Step 2
Cut your peppers into 1 inch pieces, also add to your pot.
Step 3
Add in tomato paste and sauce.
Step 4
Bring up to a boil, then down to a low simmer. Simmer for 2 hours.
Step 5
When you’re ready to eat, bake a nice loaf of Italian bread to serve on the side, excellent for dipping.
