Ginger Scallions Lobster
Ginger Scallions Lobster - Tôm Hừng Xào Gừng. You can use live fresh lobster which require more work to prep or you can use frozen. The key is to stir fry on very high heat.

Step 1
Prep the lobster

If using live Lobster:

Clean, remove the head then cut lengthwise & slightly crack the claw shells for easier serving later

Lightly sprinkle with Kosher Salt (lobster meat is already high in sodium)

Lightly dust the Lobster with Cornstarch
Step 6
(Do not use too much Cornstarch)
Step 7
Heat oil to 350F, deep fry lobster in small batches for a couple minutes or until cooked
Step 8
Remove then set aside
Step 9
In a large pan or wok on high heat
Step 10
Add cooking oil, wait until the oil is hot
Step 11
Add Ginger and Garlic

Sauté for a minute or until fragrant

Add the Lobster

Sauté for a couple minutes

Add white part of the scallions

Add chicken broth
Step 17
Soy Sauce

Stir for a couple minutes

Add Green Scallions
Step 20
White Ground Pepper

Stir, turn off heat
Step 22
Add to serving plate
