Ingredients

6 slicesbacon
thick, cut into 1-inch pieces
1.25 lbBratwurst
casings removed, your favorite flavor
2onions

½ cupbbq sauce
½ cupketchup
½ cupwater
2 tablespoonsspicy brown mustard
2 tablespoonsapple cider vinegar
1 tablespoongranulated garlic
¼ tablespooncayenne pepper
1 tablespoonliquid smoke
2 x 28 ozcanned baked beans
2 x 15 ozcannellini beans
drained
2 x 15 ozpinto beans
drained
1 x 10 ozcan rotel tomatoes
Instructions
Step 1
Cut bacon into 1-inch pieces and set aside. In a large frying pan, crumble up bratwurst. When some of the fat has rendered, add onion. Mix and cook until everything is nicely browned.
Step 2
In a large bowl, whisk together BBQ sauce, ketchup, water, mustard, vinegar, garlic, cayenne and liquid smoke. To the sauce, add the meat mixture. Stir and lightly toss to coat.
Step 3
Add all of the beans and the Rotel to the bowl and combine everything together. Pour mixture into a 4.5 quart baking dish. Top evenly with the bacon pieces.
Step 4
Bake in a 350° oven for 90 minutes...or longer if you like it browner. (Bake over foil or on a cookie sheet in case of bubble overs)
