Instructions
Step 1
Peal and boil your potatoes for 30 mins or until soft then mash and place them in a bowl.
Step 2
Add Parmigiano, corn flour, a pinch of salt and a drizzle of olive oil. Mix everything together until smooth.
Step 3
Scoop out some of your potato mix (I used an ice cream scoop), flatten it with your hands and place some of your mozzarella in the middle.
Step 4
With your hands, form a little ball, adding some extra potato mix if necessary.
Step 5
Coat each crocchetta with egg (previously whisked) and breadcrumbs and repeat.
Step 6
Fry your crocchette in sunflower oil for 4-5 mins or until nice and golden.
