Instructions

Step 1
Preheat oven to 425.
Step 2
In a 9x13 glass baking dish, salt and pepper the chicken breasts to your taste. Place in oven and cook until chicken is no longer pink, about 30-40 minutes.
Step 3
While the chicken is cooking, cook the bacon until crispy, remove from pan and then cook the onions in the bacon grease until tender. Break the bacon into small pieces and combine in a large bowl with the onions, jalapenos, cream cheese, cheddar cheese and mayo. Mix until completely combined.
Step 4
Once the chicken is cooked, remove the pan from the oven and reduce heat to 350. Spoon the cheese mixture over the chicken and put back into the oven for another 10-15 minutes, until the cheese starts getting brown and bubbly.
Step 5
Top with pork skins and drizzle with butter and hit it with the broiler for a couple minutes, just to brown the top. Watch closely as not to burn them!
