Saucy Chicken

A tangy saucy chicken dish ready in 30 minutes. Serve over rice, polenta, mashed potatoes or couscous. You can use chicken breast or thighs or a combo.

Instructions

Step 1
Put the flour and salt and pepper in a gallon ziplock bag. Add the chicken and shake until the chicken is coated.
Step 2
Add the oil to a large skillet over medium high heat. Brown chicken on both sides, about 3-4 minutes per side. Remove the chicken to a plate.
Step 3
Pour 1/2 cup of the chicken broth in the pan and scrape the bottom. Add the onion to the pan and cook 3 minutes. Add the garlic and cook 30 seconds. Add the remaining chicken stock, bay leaf, tomatoes and vinegar and cook another 3 minutes until boiling.
Step 4
Add the chicken back in and turn to low. Cover and cook 15-20 minutes, until chicken is cooked through. If the chicken is really thick you’ll probably need 20 minutes. If they are thinner, check them at 15 minutes.
Step 5
Remove the bay leaf and add in the parsley. Serve the chicken with the sauce over rice.
