Mortadella Burrata Sandwich

I went to Eataly a couple weeks ago and I haven't been able to stop thinking about this crazy delicious mortadella sandwich I got, so I decided to recreate it at home!

Basil pesto
1garlic clove
3 tablespoonstoasted pine nuts
2 ½ cupsfresh basil leaves
packed
½ cupextra virgin olive oil
6 tablespoonsParmesan
freshly grated

Instructions
Step 1
1. Place garlic, pine nuts, and basil into a food processor. With the motor running, drizzle in oil until mixture is even and smooth. Add parmesan and season with salt. Blend again.
Step 2
2. Spread pesto onto both sides of focaccia and top one side with mortadella.
Step 3
3. Top the other side of bread with burrata, drizzle of oil, salt and pepper. Top with a handful of arugula.
Step 4
4. Sandwich together and enjoy!
