Instructions
Step 1
1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until translucent.

2. Add cubed potatoes, sliced carrots, and shredded cabbage to the pot. Stir well.

3. Pour in vegetable broth and canned diced tomatoes (with their juice). Bring to a boil.

4. Reduce heat, sausage, add paprika, dried thyme, salt, and pepper. Simmer for 20-25 minutes or until the vegetables are tender.
Step 5
5. Remove from heat and let it cool slightly. Adjust seasoning if needed. .

6. Serve hot with crusty bread
