Ingredients

1 lbchicken breasts
uncooked, or thighs - diced
12Whole wheat tortillas
fajita size
4 ouncecan diced green chilis
6 ouncescream cheese
1 x 14 OzCan enchilada sauce
½ tspchili powder
½ tspsmoked paprika
½ tspgarlic powder
½ tsponion powder
1 tspcumin
salt
to taste
pepper
to taste
1 CupsGrated cheddar cheese
or shredded Mexican cheese blend
1 x 10 OzCan black beans
drained and rinsed
Instructions
Step 1
Preheat oven to 400F. Grease a 9x13 inch pan or similar.
Step 2
Sauté chicken over medium high heat until fully cooked, along with the chili powder, paprika, cumin, garlic and onion powders, salt and pepper.
Step 3
Once cooked, reduced the heat to medium low, add cream cheese and melt and mix thoroughly with cooked chicken. Then add diced green chilis and mix. Turn off heat and set aside.
Step 4
TO PREPARE ENCHILADAS
Step 5
Mix together the black beans with the chicken mixture. Take a flour tortilla, spoon in chicken mixture, then sprinkle with 1tbsp shredded cheese. Roll and place in baking dish seam side down. Repeat until you’ve filled all the tortillas.
Step 6
Pour enchilada sauce on top of prepared tortillas in baking dish. Top with remaining shredded cheese. Finish in 400F oven for 15-18 mins to melt cheese and warm everything together.
Step 7
Serve with sour cream and your favorite hot sauce and toppings like black olives and pickled jalapeños. I personally love Cholula as well!
