Step 1
Cook rice according to packet instructions.
Step 2
Heat falafel in a pan until warmed through and crispy on the outside.
Step 3
Then, heat zucchini in the pan for 5-8 minutes or until softened.
Step 4
Combine the cooked brown rice, harissa seasoning, parsley, mint, tomatoes, red onion, olive oil, lemon juice and salt.
Step 5
To serve: Add brown rice mix to a bowl and top with falafel, hummus and zucchini.
