Instructions
Step 1
Preheat oven to 350°.
Step 2
Line a 9X13 baking pan with parchment paper. Set aside.
Step 3
Zest and juice 1 lemon.
Cream Cheese Topping
Step 4
Beat the cream cheese, 1 tbsp granulated sugar, 2 tbsp lemon juice, and pomegranate juice together until smooth.
Step 5
Set aside.
Blondies
Step 6
Melt 1 cup butter.
Step 7
Add brown sugar and 1/2 cup granulated sugar. Mix together until mixture is smooth.
Step 8
Add eggs, vanilla and bourbon. Stir to mix together.
Step 9
Add all purpose flour, baking powder, and salt.
Step 10
Mix together until mixture is completely combined.
Step 11
Spread the blondies out in the lined baking pan.
Step 12
Add dollops of the cream cheese mixture over the top. I had 5 large dollops and 1 small dollop.
Step 13
Using a knife, swirl the cream cheese mixture around the pan, creating pockets of cream cheese around the blondies.
Step 14
Swirl it well, so it blends in.
Step 15
Bake for 21-23 minutes, until the center is set. This will happen when the cream cheese mixture doesn't jiggle when you gently shake the pan.
Step 16
Cool in pan for 15 minutes before moving the parchment to a wire rack to cool completely.
