Egg, Bacon, Mushroom, and Cheese Casserole

Instructions
Step 1
Preheat oven to 350°F. Butter a shallow 2-quart casserole.
Step 2
In a large skillet, cook the bacon until crisp; drain well and crumble. Add the green onions and 1 Tbsp butter to the pan and cook for 1-2 minutes. Add the mushrooms and cook for another 2-3 minutes. Add the spinach and cook until wilted, another 2-3 minutes. Remove from the heat.
Step 3
In a medium bowl, beat the eggs, milk, salt, and pepper together. Stir in the cheese and the mushroom mixture. Pour into the prepared dish and bake, uncovered, 30-35 minutes, or until puffed and set.
