Roasted Chicken With Mushroom & Parsley Orzo

This perfectly simple recipe only needs minimal prep before you pop it in the oven – and the result is a real crowd-pleaser! Creamy orzo rich with cheese, fresh parsley, leek, mushrooms and a savoury chicken stock, crowned with crispy golden chicken. Serve it up family-style and tuck in!

Instructions

Step 1
Before you start cooking, take your chicken out of the fridge, open the packet and let it air, then preheat the oven to 220°C/ 200°C (fan)/ gas 7
Step 2
Add the chicken breast portions to a baking tray with a generous drizzle of olive oil and a pinch of salt and pepper
Step 3
Put the tray in the oven for 15 min or until the chicken is cooked through (no pink meat!)
Step 4
While the chicken is cooking, cut the leek[s] in half lengthways and wash carefully to remove any grit from between the leaves, then top, tail and slice finely
Step 5
Peel and finely chop (or grate) the garlic
Step 6
Tear the chestnut mushrooms into rough, bite-size pieces
Step 7
Dissolve the chicken stock mix in 400ml [800ml] boiled water
Step 8
Add the orzo, chopped garlic, sliced leek, and chestnut mushrooms to an oven-proof dish
Step 9
Pour over the chicken stock, making sure all of the orzo is covered
Step 10
Put the dish in the oven for 20-25 min or until the orzo is tender with a slight bite
Step 11
Meanwhile, chop the parsley finely, including the stalks
Step 12
Grate the cheddar cheese
Step 13
Use the remaining time to clear up, set the table, have a cup of tea or simply chill!
Step 14
Once the orzo is cooked, stir half the chopped parsley (save the rest for garnish!) and all the grated cheese through the orzo
Step 15
Season with a generous pinch of salt and pepper – this is your mushroom & parsley orzo
Step 16
Serve the mushroom & parsley orzo topped with the roasted chicken
Step 17
Season with a generous grind of black pepper, garnish with the remaining chopped parsley and drizzle with some olive oil
