This is a lasagna recipe my mother taught me and has been my favorite since I was a kid. You can add whatever you want or modify as you like. They add mushrooms but I personally don't like them so I leave them out.

Instructions

Preheat oven to 350 degrees

Mix the cottage cheese, ricotta, and parmesan in a 1:1:2 ratio (so, for example, .5 cups cottage cheese, .5 cup ricotta, 1 cup parmesan) in a large bowl using a potato masher. When the mix is even, add about 1 tbsp of parsley. Once mixed, set to the side.

Fry the sausage or ground beef until thoroughly cooked

Add 12 oz of sauce and a little meat to the bottom of a 10 x 14 or 9 x 13 baking pan

Add a layer of uncooked lasagna noodles, a layer of the cheese mixture from step 1 (about 1 cup of the mixture), half of the remaining meat, shredded mozzarella, and 12 ounces of sauce.
Step 6
Repeat step 4 using the remaining meat and cheese mixture
Step 7
Add a final layer of noodles and spread the remaining 12 oz of sauce over the noodles
Step 8
Cover the pan tightly with aluminum foil and bake at 350° for 45 minutes

Step 9
At the end of the 45 minutes, remove the pan and aluminum foil. Cover in mozzarella and parmesan, recover the pan in aluminum foil, and bake for 15 more minutes.
Step 10
Remove from heat and uncover. Let stand 5-10 minutes before serving.
