Avocado and Coriander sauce - ‘Guasacaca’

Guasacaca Sauce, is the authentic name for this Venezuelan Avocado and Coriander sauce, and is my go-to for Cassava Fries, this Guasacaca sauce is a tangy guacamole-type sauce traditional from Venezuela and is a match made in heaven for fries, you can also use it for any Latin Style street food like empanadas, arepas, tacos, etc, it goes really well with bbq meats.
It takes no time to make and it keeps in the fridge for at least two weeks, so I recommend you make a double batch cause you’ll be so obsessed with this one you’ll want to put it on everything.
With its roots deeply ingrained in Venezuelan culinary culture, Guasacaca sauce brings an authentic taste that captures the essence of the country's vibrant street food scene.

Ingredients

1avocado
ripe, peeled and pit removed
0.5brown onion
peeled cut roughly
1garlic clove
2 if you like it strong
0.5green capsicum
deseeded, roughly chopped
1 bunchCoriander
washed
½ coil
neutral, canola or grapeseed, avoid olive oil
1juice of lemon
1 Tbspwhite wine vinegar
½ tspsalt
adjust to taste
1 tspsugar
adjust to taste
Instructions
Step 1
In a blender add all the ingredients and blend till smooth, adjust seasoning to personal taste, the sauce should be tangy and slightly sweet and salty.
Step 2
If you like it creamy you can also add sour cream or cream cheese to the finished sauce and it turns to a smooth punchy guacamole.
