Instructions

Step 1
Chop tortillas into 1 or 2 inch chunks. Dice onion.
Step 2
Heat large skillet over medium heat. Add oil once the pan is hot.
Step 3
Add onions and sauté.
Step 4
Add tortillas and seasoning. Mix well. Cook for 15 minutes or until tortillas crisp up.
Step 5
Push tortillas to one side of the pan to cook eggs. Melt butter on the empty side of the pan.
Step 6
Crack eggs into butter and season with salt and pepper. While the eggs cook, mix them to scramble.
Step 7
Once eggs are cooked, mix with tortillas and serve. Optionally add slices of lime, avocado, and cheese for garnish.
