Step 1
🍳 Heat a medium sized, non-stick frying pan over a medium heat with a little olive oil, then add a mini tortilla wrap to the pan.
Step 2
🌮 Cook for a couple of minutes, then flip the wrap.
Step 3
🍳 Scatter 20g grated cheese over the wrap, leaving a gap in the centre, then crack an egg in the middle.
Step 4
🌮 Add any other fillings of your choice - I added 1 chopped spring onion, 15g diced chorizo, a handful of sliced cherry tomatoes, chilli flakes and some Mexican style seasoning.
Step 5
🍳 Add a small amount of cold water around the edges of the pan, then place a lid on top. Tip: if you don't have a frying pan with a lid you can use another pan turned upside down or a large, heat proof plate.
Step 6
🌮 Turn the heat down to low and cook until the egg white has set but the yolk is still runny.
Step 7
🍳 Serve & fold in half like a taco. Enjoy!
