Cheesy Potato Pancakes

This super easy cheesy potato pancake is the perfect snack to satisfy those afternoon cravings! You can season the potatoes however you like but I highly recommend adding garlic powder/fresh garlic!

Instructions

Preparing your potatoes

Step 1
Wash and peel your potatoes with a potato peeler.
Step 2
Slice the potatoes into chunks so that they cook faster and more evenly.

In a pot, salt the water and add your potatoes.

Turn the heat to medium low and allow for the potatoes to boil until fork tender.
Step 5
Once the potatoes are done, drain and remove them from the pot.

Preparing the potato pancakes

Step 6
Place the cooked potatoes into a bowl and mash them until smooth.
Step 7
Season with fresh minced garlic, garlic powder, black pepper and salt.

Mash until smooth again.

Add in the cornstarch (or potato starch).

Mash until a dough forms.

Set the potato "dough" aside.
Step 12
Cut your cheese of choice into cubes. I used mozzarella cheese but cheddar cheese works well too!
Step 13
Place a small amount of the potato "dough" onto your hand, add a cube of cheese on top of it and close it with another layer of potato "dough."
Step 14
Continously roll the potato + cheese until a smooth ball forms.
Step 15
Slightly flatten the ball into a pancake shape.

Frying the potato pancake

In a pan over medium heat, add enough oil to cover the bottom of your pan for a shallow fry.

When the oil comes to a proper frying temperature (check this by inserting a wooden chopstick into the oil, if there are bubbles then the oil is ready for frying), fry the potato pancakes for 3-4 minutes per side.
Step 18
Flip the pancake and fry the other side when it becomes golden brown.
Step 19
Serve immediately with your sauce of choice (ketchup, sweet thai chili sauce etc) or enjoy as is!
