WW Tortillia Quiche
The crustless quiche are ok, but I needed more.
I sprayed a pie dish with Pam, then used 4 Mission Lo-Carb tortillas to line the dish, leaving enough to go up the sides, pushing them around in the dish. I beat 6 eggs, added 1/2 cup Breakstone 2% milk fat small curd cottage cheese, chopped spinach, chopped orange bell pepper, chopped purple onion, garlic powder, a pinch of S&P and a chopped pork sausage pattie. I poured that over the tortilla crust I had prepared and topped that with 1/4 cup 2% reduced fat Mexican Cheese. Baked for 30 minutes on 350 degrees. You could use any veggies you want, meat also-I just had all of these things on hand. It smells divine! Although I am sure some of the mixture seeped around the tortillas on the bottom, it still should cut/remove nicely. I did the math and if I cut my pie into 6 servings, it will be 4 points per slice.
4 Tortillas =8 points
1/2 cup Cottage Cheese=3 points
6 Eggs=0
Spinach, Pepper, Onion, garlic powder=0
Pork Sausage Pattie=7 points
1/4 cup Mexican Cheese-3
21 divided by 6= 3.5 points-round up to 4
