Soy Sauce Noodles with Tofu (high protein, super easy and delicious)

Simple, easy, cheap and super delicious! This yummy soy sauce noodles is the perfect vegan dish to whip up for dinner or would even be great for meal prep!
this recipe is adapted from @TIFFY COOKS 🥟 soy sauce noodles recipe.. she uses Shanghai noodles but I could only get Singapore noodles at my supermarket!

Ingredients
4 servings

400gnoodles
cooked

300gfirm tofu
cut into strips

3spring onions

6garlic cloves
minced

1red chilli
minced

1 Tbspoil
for frying
for the sauce
Instructions
Step 1
Fry the tofu in 1 tbsp of oil with 1 tbsp of soy sauce until crispy then leave aside
Step 2
Cook noodles to packet instructions and leave aside
Step 3
Whisk together the sauce ingredients and leave aside
Step 4
Bring the pan back to medium heat and cut the white end of the spring onion into 1 inch pieces. Also cut up the green ends into 1 inch pieces and leave the aside for later
Step 5
Sauté the white spring onion in the pan with the garlic and chilli for 2 - 3 minutes
Step 6
Turn the heat to high and add the cooked noodles and the sauce to the pan and sauté for 2 - 3 minutes until the liquid has started to thick/absorb
Step 7
Add the green spring onion and the tofu back into the pan and sauté for a further minute then remove from the heat and enjoy!
